This is a simple lasagna recipe by my aunt, Ethel Lalor. It may be a bit old-fashioned but it's a great basic recipe that you can make your own. If you have fussy kids, there is nothing offensive about this recipe. :)

Ingredients of
Aunt Ethel's Lasagna

  •  2 lbs ground beef
  • 1 large onion
  • 1 clove garlic minced
  • 1 can tomato sauce (15oz)
  • 1 can tomato paste (7 1/2 oz)
  • 1 tsp salt or garlic salt
  • 1/2 tsp pepper
  • 1 tsp oregano
  • 1 lb ricotta or cottage cheese
  • 1 egg beaten
  • 1 tsp parsley flakes
  • Mozzarella cheese
  • Parmesan cheese (optional)

How to Make
Aunt Ethel's Lasagna

Meat Mixture:

  1. Brown ground beef & onion and drain excess fat.
  2. Add garlic, tomato sauce, tomato paste, salt pepper and oregano.
  3. Simmer 1 to 2 hours at a low temperature. (This can be done the day before)

Cheese Mixture:

  1. Mix together Ricotta or cottage cheese, 1 beaten egg and 1 tsp parsley flakes. Put aside.

Build Lasagna:

  1. Grease a 9x13 pyrex or lasagna pan.
  2. Cook approximately 10 lasagna noodles making sure not to overcook. (or use ready to use noodles)
  3. Lay one layer of lasagna noodles in the greased pan.
  4. Cover noodles with 1/2 the cheese mixture.
  5. Cover the cheese mixture with 1/2 the meat mixture
  6. Sprinkle meat mixture with a thorough sprinkle of oregano
  7. Add one layer of grated mozzerella cheese
  8. Repeat one more layer of noodles, cheese mixture, meat mixture, oregano and mozzarella cheese.
  9. Sprinkle the top with parmesan cheese. (optional)
  10. Bake at 350 degrees for 45 minutes. Let set for 5-10 minutes before serving.
