Orpha's Chili Sauce

Jane traded some salsa for a jar of this chili sauce and loved it. Orpha is 100 years old at the time of adding this recipe and is a little spitfire! She walks everyday and inspires everyone around her to get or keep active. She was Emie Neilson's (Jane's Mom) good friend.

Ingredients of
Orpha's Chili Sauce

  • 6 qt basket of Tomatoes (24 cups)
  • 6 cups diced Celery
  • 4 cups diced onion
  • 1/2 cup Pickling Salt
  • 2 to 5 cups White or Brown Sugar (depending on the level of sweetness desired)
  • 2 cups Cider Vinegar
  • 2 Tbsp Mustard Seed
  • 2 Green Peppers diced

How to Make
Orpha's Chili Sauce

  1. Blanch, peel and dice tomatoes.
  2. Mix tomatoes, celery and onion.
  3. Sprinkle with salt and leave overnight.
  4. In the morning pour off juice.
  5. Add sugar, vinegar, mustard seed and peppers.
  6. Boil for 20 min.
  7. Follow proper canning procedures and bath jars for 20 minutes to seal.

Notes

You can also add a few jalapeno peppers if you like this spicy. To me it doesn't need any heat but you do you...
