This cake reminded me of one our grandmother used to make . She called it a Queen Elizabeth cake.

Ingredients for
Judy's Banana Cake

  •  2 cups flour
  •  1 1/2 teaspoon baking powder
  • 1 teaspoon baking Soda
  • 3/4 teaspoon salt
  • 1 cup white sugar
  • 1/2 cup shortening
  • 1/2 cup sour milk ( Add 1/2 tablespoon of vinegar to 1/2 cup milk and let it sit for 5 minutes)
  • 1 cup mashed bananas
  • 2 eggs well beaten
  • 1 teaspoon vanilla

How to Make
Judy's Banana Cake

  1.  Mix flour, soda ,baking powder, salt and sugar into a mixing bowl and set aside.
  2.  Mix shortening, 1/4 cup sour milk and mashed bananas.
  3. Add set aside flour mixture and mix flour until dampened, then beat 2 minutes with mixer on low speed.
  4. Add eggs with remaining 1/4 cup of milk and vanilla.
  5. Beat 1 minute with mixer on low speed
  6. Bake at 375 in greased and floured 9" by 13" pan for 35-40 minutes
  7. Prepare Topping
  8. 1/4 cup butter, 3/4 cup brown sugar, 1/2 cup coconut, 1/4 cup nuts.  Cream butter and sugar together, add 1 1/2 Tablespoons cream or milk. Beat til smooth. Add coconut and nuts. 
  9. Spread topping over hot cake. Place at least 6 inches from broiler. Broil until sugar is bubbly and top is delicately browned. It takes only 3-4 minutes so keep an eye on it.
