This is my husband Dave's favourite meal and my son Jordan's first or maybe second, only to Lebanese cuisine. You can substitute the salmon for crab or fish. This is a great recipe to use up leftovers. Costco salmon one night, use leftovers for salmon cakes the next ... can never get enough! So yummy, even if you're not fan of fish!

Ingredients for
Karen's Salmon

Salmon Cakes:

  • 1 lb cooked salmon, seared
  • 1/2 cup finely diced red onion
  • 1/2 cup finely diced celery
  • 3/4 cup finely diced red pepper
  • 1/4 cup fresh parsley, minced
  • 1/2 tsp hot sauce (Tobasco)
  • 1 tsp Worcestershire sauce

Creamy Mustard Sauce:

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 2 Tbsp Dijon mustard
  • 2 Tbsp fresh chives, minced
  • 1/4 tsp dried dill
  • 1/2 tsp garlic powder
  • 1 tsp hot sauce
  • 1 Tbsp seafood seasoning (Old Bay reduced sodium )
  • 3/4 cup Panko
  • 1/2 cup mayonnaise 
  • 4 tsp Dijon mustard
  • Zest of 1 lemon
  • 2 eggs
  • Canola oil for sautéing

How to Make
Karen's Salmon

Salmon Cakes:

  1. Heat 2 tsp of canola oil, sauté onion, celery and red pepper until veggies are soft but not browned.  Cool vegetables.
  2. Combine vegetables with everything else and form patties. 
  3. Chill 15 - 20 minutes to firm up.
  4. Heat 2 Tbsp of canola oil over medium heat.  In a small batches, fry salmon cakes 3 - 4 minutes per side.

Mustard Sauce:

  • Combine ingredients and chill for 30 minutes.
