My friends Gloria & Debbie would prepare the roast beef this way at church during conferences and it was always tender and delicious.

Ingredients for
Slow & Low Roast Beef

  •  2 lbs roast beef (rump or sirloin)
  • 1 Tbsp olive oil
  • 1/2 tsp. rosemary
  • 1/2 tsp parsley
  • 1/2 tsp. thyme
  • 1/2 tsp garlic powder
  • 1/8 tsp pepper
  • 1/2 cup beef broth, water or red wine
  • 1 clove garlic 

How to Make
Slow & Low Roast Beef

  1.  Rub roast with olive oil
  2. Mix all of the listed spices in a bowl
  3. Rub on the outside of the roast
  4. Put beef broth, water or wine in bottom of roasting pan
  5. Cover and cook at 180 degrees overnight until afternoon
  6. Check meat and cook until med. rare at an internal temp of 145 degrees  or longer if prefer well done
  7. Let meat rest for 10-15 min before cutting into thin slices  with an electric knife or meat slicer.
  8. Layer meat, mushrooms then gravy, one layer at a time until meat is finished.

Notes

Gravy:
1 1/2 cups water
3 Tbsp Bisto
5 white mushrooms (optional) or more
While the roast is resting , sauté the mushrooms
Take the pan drippings, add water and 3 Tbsp. bisto rich brown gravy powder 
Heat until boiling, stirring constantly with a whisk
Serve immediately then refrigerate
The next day the meat can be warmed in your oven at 350 deg. F for 25-30 min in a covered dish
