Sunshine Salad will always taste like Virginia.

Jane and Jake were visiting Jake’s dear friend — lovingly known as Ma — when they were invited to lunch at her son’s home. It was a true Southern afternoon filled with laughter, hospitality, and that special kind of welcome you don’t forget.

At the center of the table sat a bowl of golden Sunshine Salad — light, citrusy, and full of unexpected joy. One bite, and it was sealed into memory.

Now, every time they make it, they’re transported back to that sun-soaked day in Virginia — where kindness was abundant, and the salad was as bright as the people who served it.

Ingredients for
Sunshine Salad

  •  1 Fresh Pineapple (cut into chunks)
  • 1 Can Mandarin oranges in syrup (15 oz can)
  • 2 Bananas (sliced)
  • Red Seedless Grapes (cut in half - large handful)
  • 1 Box Jello Vanilla Instant Pudding 4 serving size

How to Make
Sunshine Salad

  1.  Do not drain the oranges. Cut the pineapple and banana into chunks. Combine the fruit in a large bowl.
  2. Sprinkle the dry pudding mix (do not add milk) over the top of the fruit. Mix well.
  3. Refrigerate, covered for at least one hour. Serving size is one cup.
