Turtle Bars

I had some pecans to use up, so I went looking online for a simple recipe and found one for pecan bars. I wasn’t sure how they would turn out, but when they baked, the kitchen filled with that warm, buttery smell, and I felt hopeful. 

I brought them to my volunteer shift at the Amherstburg Food and Fellowship Mission, thinking they’d just be a nice treat to share. To my surprise, people loved them. My co-volunteer Lisa, who always enjoys my desserts, especially liked this one. 

Now I recommend these bars to first-time bakers because they’re so easy and almost impossible to mess up. This recipe reminds me how something simple can bring joy to others.

Ingredients for
Turtle Bars

Base:

  • 2 cups alll-purpose flour
  • 1 cup packed brown sugar
  • 1/2 cup butter (softened)

  • 1 cup pecan halves (or more)

Caramel:

  • 2/3 cup butter (melted)
  • 1/2 cup packed brown sugar

  • 1 cup semi-sweet chocolate chips

How to Make
Turtle Bars

  1. Combine flour, brown sugar, and softened butter to form a crumbly mixture. Press into a greased 9 x 13" baking pan.
  2. Sprinkle 1 - 1 1/2 cups of pecan halves evenly over the crust.
  3. For your caramel, melt the butter and brown sugar in a saucepan over medium heat, stirring constantly. Boil for 1 minute, then pour over the pecans.
  4. Bake for 20 - 25 minutes or until bubbly and lightly golden.
  5. Remove from oven and sprinkle immediately with chocolate chips. Let sit for 2 - 3 minutes, then spread evenly.

Notes

Feel free to switch out the caramel sauce wth caramel bits or dulce de leche or use a different type of nut.
