Getting together at the farm for what we call "Farm Days" is always a good time that includes a little work and a lot of food! Since my son's partner is vegan I have had to get creative with my cooking. You will find a lot of my recipes that include a vegan version of the same dish. This is my altered version of my sister, Jill Kanwischer's, Ultimate Salted Chocolate Chunk Cookie recipe. We tested it at our first Farm Day of 2024 and it was a hit with everyone including the non-vegans.

Ingredients for
Vegan Chocolate Chip Cookies

  •  1/2 cup sugar
  • 3/4 cup brown sugar
  • 1 tsp salt
  • 1/2 cup coconut oil
  • 1/4 cup unsweetened coconut dairy-free milk
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 cup vegan dark chocolate chips or chunks
  • Flaked sea salt

How to Make
Vegan Chocolate Chip Cookies

  1.  Mix together sugar, brown sugar, salt and coconut oil.
  2. Add coconut milk and vanilla and mix well.
  3. Mix in sifted flour and baking soda.
  4. Stir in dark chocolate chips or chunks.
  5. Chill dough for at least 30 minutes.
  6. Preheat oven to 350 degrees F.
  7. Line a baking sheet with parchment paper.
  8. Evenly space up to 9 cookies per sheet and sprinkle with flaked sea salt.
  9. Bake at 350 degrees for 12 to 15 minutes.

Notes

For crunchy carmelized edges allow the cookies the full time to brown.
