I learned to make these squares while vacationing at my Aunt Ethel Lalor's cottage in Haliburton. The cottage was aptly named "Shangri-Lalor" and to this day remains in the family (Cousin Jan).

Ingredients of
Aunt Ethel's Peanut Butter Squares

  • 3/4 cup brown sugar
  • 3/4 cup corn syrup
  • 1 3/4 cups peanut butter
  • 3 cups crushed Corn Flakes
  • 1 1/2 cups Rice Krispies
  • dash of salt
  • 1 can butter cream icing (or homemade)
  • 5 ounces of Bakers semi-sweet chocolate
  • 2 tbsp + 1 tsp butter

Aunt Ethel's Peanut Butter Squares

  1. In a sauce pan, heat brown sugar and syrup until blended, then take off stove.
  2. Add peanut butter, cereal and salt and mix well by hand.  Press into a 9 x 13" baking dish and set aside until cool.  
  3. Add a thin layer of butter icing.  Allow to set.
  4. Melt chocolate and butter in the microwave 30 seconds at a time until almost melted.  Stir it to allow the chocolate to finish melting.  Pour the chocolate out over the icing layer and quickly spread it out evenly.  Trick to smooth the chocolate layer - give the pan a gentle shake back and forth and it will smooth out any lines left after smoothing it out.  
  5. Allow to cool and then cut into small squares.
