I have often made these waffles for Christmas brunch with my kids. They are perfectly crisp and golden on the outside and light and fluffy on the inside.

Ingredients of
Belgian Waffle

  •  2 1/4 cups All Purpose Flour
  • 1 Tbsp Baking Powder
  • 3 Tbsp Sugar
  • 1/2 tsp Salt
  • 1 tsp Cinnamon
  • 2 large eggs (separated)
  • 1/2 cup Vegetable Oil
  • 2 cups Milk
  • 1 tsp Vanilla Extract
  • Fruit or chocolate chips optional

How to Make
Belgian Waffle

  1.  In a large bowl, whisk together the flour, baking powder, sugar, salt, and cinnamon.
  2. In a medium bowl beat the egg whites with a hand mixer until stiff peaks form. Set aside.
  3. In a separate medium bowl mix together the egg yolks, vegetable oil, milk, and vanilla.
  4. Add the egg yolk mixture to the dry ingredients and mix well.
  5. Fold in the egg whites.
  6. Add fruit or chocolate chips if desired but do not over mix.  Allow batter to rest while you heat your waffle iron.
  7. Spray your waffle iron with non stick cooking spray. 
  8. Heat waffle iron as per manufacturer's directions. (For my Cuisinart, 375 degrees)
  9. Pour the batter onto your waffle iron and cook as per manufacturer's directions. (For my Cuisinart, 4 - 6 min.)
  10.  Serve immediately with butter, syrup, powdered sugar or any other favourite toppings.
