1 package of instant vanilla or chocolate pudding mix
1 tsp baking soda
1 tsp salt
2 cups semi sweet chocolate chips
How to Make Chocolate Chip Oatmeal Cookies
Preheat oven to 350°F.
In a stand mixer, cream butter and sugars until light and fluffy (5 - 7 minutes on medium).
Beat in eggs and vanilla 3 - 5 minutes on medium.
In another bowl whisk oats, flour, dry pudding mix, baking soda and salt; gradually beat into creamed mixture just until combined. Stir in chocolate chips.
Line cookie sheets with parchment paper and drop dough by tablespoonfuls onto baking sheet about 1” apart, flattening slightly. Cook at 350°F until lightly browned, approximately 10 - 12 minutes.
Notes
This can also be done in an air-fryer at 325°F for 8 - 10 minutes.
