Ingredients of
Hot & Sour Soup

  • 1 tbsp Coconut Oil
  • 5 Carrots
  • 3 Celery
  • 1 Cooking Onion
  • 10 button mushrooms (sliced)
  • 3/4 cup Peas (frozen)
  • 1 can Coconut Milk
  • 3 Limes (if juice, more if drier)
  • Thai Red Curry Paste (to taste)
  • 3 tbsp Soya Sauce
  • Stock (chicken, beef, vegetable)
  • 1/8 cup Apple Cider Vinegar
  • 1 tbsp fresh ginger (finely grated)
  • 1 tbsp roasted garlic
  • 1/2 bunch Parsley (coarsely chopped)
  • Precooked starch (rice noodle, Chinese dumpling)

How to Make
Hot & Sour Soup

  1. In a medium sauce pan, saute carrots, celery, onion and mushrooms for 15 minutes or until they start to carmelize.
  2. Fill the sauce pot 1/2 way with preferred stock .
  3. Add all other ingredients with the exception of the parsley and noodles and simmer for 2 hours.
  4. Add parsley 2 minutes before your soup is ready to serve.
  5. When serving. Add your precooked noodles to the bowl and spoon over soup.

Notes

Meat, shrimp or chicken can be added.
