Ingredients of Lemon Squares
Crust:
1 cup all purpose flour
1/2 cup butter
1/4 cup sugar
Topping:
1 cup sugar
2 tbsp all purpose flour
1/2 tsp baking powder
1/4 tsp salt
2 eggs, lightly beaten
2 tsp grated lemon rind
3 tbsp lemon juice
Icing sugar
How to Make Lemon Squares
Crust:
In a food processor or mixing bowl, combine flour, butter and sugar, mix well.
Press into a greased and floured 8 x 8 baking pan.
Bake in 325°F oven for 20 minutes or until golden.
Topping:
In a food processor or bowl, combine sugar, flour, baking powder, salt, egss, lemon rind and lemon juice, mix well.
Spread over base and return to 325°F oven for 20 - 25 minutes or until nearly set.
