Mexican Recipes : Appetizers and Snacks

These are Tim Berthiaume's favourite "go to" happy hour appetizer. If you love TexMex flavours you will love serving these fun little treats. They are especially popular with men at parties. They are a larger, more hearty bite.

Ingredients of
Mexican Hats

  • 1 package of wonton wrappers
  • Olive oil

Filling:

  • 1 lb. of ground beef
  • 1 package of taco seasoning mix
  • 1 ½ cups of Monterey Jack cheese shredded
  • 1 ½ cups of Cheddar cheese shredded
  • 1 cup of Ranch Dressing
  • 1 red pepper chopped
  • 1 green pepper chopped (for some extra heat you can add some chillies or jalepeno peppers)

How to Make
Mexican Hats

Make the cups:

  1. Lightly brush each wrapper (both sides) with olive oil and form into cups in a muffin tin.
  2. Bake at 350o for 7-8 minutes (until lightly toasted).
  3. Let cool
  4. Once cooled I transfer the toasted cups to a disposable lasagna pan (this recipe will fill 3 pans).

Make filling:

  1. Make the filling by preparing the taco meat according to the package directions.
  2. Add the rest of the ingredients to the meat mixture and mix well.
  3. Fill the cups (very full) with the filling.
  4. Cover with foil and they are ready to transport to your party. (skip this step if making these at home)
  5. At your party, uncover and bake at 350o for 10 minutes or until hot ... do not overcook or the wontons will burn.
  6. Enjoy!
