Penne with Meat Sauce

Tim Berthiaume is not a fan of cooking with measurements. He likes to go by taste, so season then taste and repeat. This is a bit of a copy cat recipe from the pasta at the Caboto Club in Windsor. This is his version of that recipe.

Ingredients of
Penne With Meat Sauce

  • Olive oil
  • 3-4 large onions 
  • 6-8 cloves of garlic minced
  • 2 lbs. lean ground beef and 1 lb ground pork
  • Pepper
  • Salt
  • Italian seasoning
  • 1 Bay leaf
  • 4 cups Chicken broth
  • 2 large cans Tomato paste
  • 2 large can Pureed tomatoes
  • Parmesan cheese

How to Make
Penne With Meat Sauce

  1. Cover bottom of pot with olive oil
  2. Chop or blend onions in food processor
  3. Cook onions until tender & add garlic
  4. Add meat and cook until browned
  5. Cover top of meat with pepper, salt, Italian seasoning and a bay leaf
  6. Mix 4 cups chicken broth, add to meat mixture
  7. Cook approx. one hour
  8. Add 2 lg. cans of tomato paste and 2 lg. cans of pureed tomatoes, pour in pot and simmer an additional 2 hours, stirring occasionally.
  9. Remove bay leaf
  10. Cook Penne pasta according to directions on package. 
  11. Pour sauce over pasta and top with Parmesan cheese.
