Quinoa Salad

Quinoa is a nice, healthy grain and makes a great base to this salad. The trick to making good quinoa is to cook it in a stock rather than water.

Ingredients of
Quinoa Salad

  • 1 cup quinoa – cook & cool
  • 1 lg. fresh mango, diced
  • 1 large sweet red pepper, diced
  • 1 cup canned black beans, rinsed
  • 1 jalapeno pepper, finely diced
  • 1 green onion, chopped
  • Handful fresh cilantro, chopped

Dressing:
  • 2 T. olive oil
  • juice and zest of one lime (a nice big juicy one)
  • 1 t. cumin
  • salt and pepper to taste

How to Make
Quinoa Salad

Cook Quinoa:

  1. Bring 2 cups chicken or vegetable stock to a boil
  2. Add quinoa, simmer 15 minutes covered
  3. Turn off burner and let sit covered 15 minutes. 
  4. Cool in fridge for 30 minutes.


Make salad:

  1. If you have left over chicken pull it apart into bite sizepieces and add to the salad.
  2. Put all ingredients into a large bowl
  3. Make dressing
  4. Pour dressing over top & stir

Notes

Chicken is a nice addition if you have some leftovers or keep it vegetarian. Life is full of options!
