Ingredients of Taco Pie
1 lb ground beef
1 onion, chopped
4 cloves garlic, minced
½ tsp ground cumin
½ tsp chili powder
Salt & fresh ground pepper
2 Cups sweet potato, peeled and shredded
½ Cup cilantro, chopped
1 small green pepper, diced small
2 tomatoes, diced small
3 Cups cheese (Mozzarella or Monterey Jack or combo)
6 large tortillas
Salsa
Sour Cream
How to Make Taco Pie
Preheat oven to 400° F.
In a large skillet, brown ground beef with onion, garlic, spices, salt and pepper.
Add sweet potatoes and cook 5 minutes.
Remove skillet from heat and add cilantro.
Place 1 tortilla on a baking sheet lined with parchment paper. Top with about 1/5 of meat mixture, 1/5 of tomato & peppers, and ½ cup cheese. Cover with another tortilla and repeat with the rest of the tortillas. Top with cheese.
Bake for 20 minutes, broil for last 2 minutes (if necessary).
Cut into wedges and serve with salsa and sour cream.
