Norbert Bolger’s signature pasta dish was born after attending a benefit with friends, when he and his wife Karen came home and were still hungry. A little rummaging, a lot of improvising, and a pot of pasta later, a classic was born. With cream, cheese, bacon, garlic, and mushrooms—it’s rich, simple, and unforgettable. So good, in fact, Norbert had to write it down the next day.

Now, it’s a family favourite—and proof that sometimes the best recipes begin with, “What do we have in the fridge?”

Ingredients for
Norbert's 3 Cheese And Mushroom Pasta

  • 1 box rigatoni pasta
  • 16 oz cremini mushrooms
  • Seasoning Salt (I like Lawrey's)
  • 6 - 8 slices thick cut bacon
  • 1/2 cup (or so) Fresh cilantro, chopped
  • 2 cups asiago cheese, grated
  • 3/4 cup gorgonzola cheese, grated or chopped
  • 1/2 cup parmesan cheese, shredded
  • 2 cups 10% cream
  • 1/8 cup butter
  • olive oil
  • 1 tsp Vision seasoning (if you can't find it, use vegetable)
  • 2 - 3 cloves garlic, minced

How to Make
Norbert's 3 Cheese And Mushroom Pasta

  1. Cook pasta as directed, by the time it is done the sauce should be ready.
  2. Cook bacon until mostly crispy. Chop into large pieces (3/4 - 1"). Chop up Cilantro. Shred/grate cheeses. Slice or quarter mushrooms.
  3. In a pan add 1/2 tablespoon of olive oil and cook mushrooms. Add a touch of Lawrey's Seasoning Salt (optional). If you are drinking white wine, throw a bit in! When done, drain and set aside.
  4. In a separate large pan with lid, melt 1/2 a stick of butter. Add a splash of olive oil on low heat, add the garlic and let cook a few minutes. Add 1 cup of cream and stir. Add about half the cheese (no parm yet) and stir until blended.
  5. Add the other cup of cream and the rest of the cheese. Add half the parmesan and stir. Add the Vision then cover and cook on low heat until the pasta is done. Do not let it boil.
  6. Drain the pasta and add to the pan with sauce and stir until everything is coated. Add mushrooms and half of the bacon.
  7. Transfer to a large serving dish or serve into individual bowls. Top with the rest of the bacon, some cilantro and more parmesan. The rest of the cilantro and parmesan can go on the table if people want more.
