Ingredients for
Cream Of Mushroom Soup
- 1 large onion
- 24 ounces fresh mushrooms
- 2 tbsp. olive oil
- 1 cup heavy cream
- 1 cup chicken broth
- 8 oz. cream cheese
- 1 tbsp. Better than Bouillon chicken flavor or 2 cubes chicken bouillon
- 1 tbsp. minced garlic
- 1 tsp. dry thyme
- 1 tsp. black pepper
How to Make
Cream Of Mushroom Soup
- Take 1/2 of onion chopped and 1/2 of mushrooms chopped and puree in food processor with 2 tbsp. olive oil.
- Place puree in saucepan and heat until moisture is reduced by 1/2.
- Add remaining mushrooms and onions (chopped) to puree in the same saucepan.
- Add cream and chicken broth, cream cheese, chicken bouillon, minced garlic, thyme and black pepper.
- Simmer for approximately 30 minutes or until onions and mushrooms are tender.
