Jane accidentally planted horseradish a little too close to her garden — and now it’s taken over like it owns the place. The roots, she swears, go straight to China. Instead of fighting the inevitable, she decided to embrace it.

This year, she dug up a few pounds and turned it into a batch of fresh, homemade prepared horseradish — sharp, fiery, and absolutely delicious. Sometimes, when life gives you roots... you make horseradish.
