Hamburger rollups.

Hamburger roll ups are a delightful twist on traditional burgers, combining seasoned ground beef and cheese rolled into dough and baked to perfection.

Ingredients of
Hamburger Roll Ups

Ingredients:

1 pound ground beef

1 medium onion, diced

¾ teaspoon salt

½ teaspoon black pepper

1 tablespoon Worcestershire sauce

1 tablespoon mustard (Dijon or yellow)

1 cup shredded cheese (cheddar or your preferred variety)

1 tube refrigerated Cresent dough 

Optional: ½ to 1 cup cooked and crumbled bacon

How to Make
Hamburger Roll Ups

Mix ground beef with diced onion, salt,pepper, mustard, and worcestershire sauce 

Spread Cresent dough flat on parchment paper

Make even layer of beef mixture, layer cheese on top of beef

Roll up using the paper to contain, keeping as tight as you can.  Store in refrigerator to let firm up.  (15 mins min)

Line cookie sheet with parchment paper 

Slice log into 1 inch slices and place on cookie sheet 

Sprinkle cheese on top of rollup

Bake at 400 for 25 minutes 

Note

After rolled, let chill for at least 15 mins

Bacon Twists

  •  2 lbs. bacon

How to Make
Bacon Twists

  1.  Preheat oven to 400 degrees Fahrenheit.
  2. Line a cookie sheet with aluminum foil.
  3. Twist individual bacon strips as tight as possible without breaking them and place as close together as possible. This will help them to stay twisted.
  4. Place tray in oven and bake for approximately 45 minutes.
  5. Remove from oven and place bacon twists on wire rack to cool.
  6. Serve to your happy guests!

What I love about this recipe is that these cookies are healthy enough to eat for breakfast! Just 4 ingredients. No flour or eggs. Unlike other cookie recipes, these ones don’t need either of those basics. Naturally vegan and gluten-free. These cookies are great if you can’t tolerate dairy or gluten. Ready in 10 minutes. Blueberry Breakfast Cookies

2 cups rolled oats gluten-free, if needed

2 large bananas mashed

1/2 cup peanut butter

1/4 cup blueberries

How to Make
Blueberry Breakfast Cookies

Instructions

Preheat the oven to 350F. Line a cookie sheet or baking tray with parchment paper and set aside.

In a large mixing bowl, combine your oats, peanut butter, and banana and mix well. Fold through your blueberries using a rubber spatula.

Form 12 balls of dough and place on the lined tray. Press each ball into a cookie shape. Bake the blueberry breakfast cookies for 10-12 minutes, or until golden on the edges and just cooked in the center.

Remove cookies from the oven and allow cooling on the tray for 10 minutes, before transferring to a wire rack to cool completely. 

Note

Do not overbake the cookies, as they continue to bake while they are cooling on the pan.

Be sure to use gluten-free rolled oats, to keep these as gluten-free breakfast cookies.

Make blueberry protein cookies, by adding a scoop of protein powder to your cookie dough.

Make low-carb blueberry cookies by subbing the oatmeal for almond flour or coconut flour.

To store: If you plan on eating the cookies within 2-3 days, you can keep them at room temperature. Store them in a sealed container or covered in plastic wrap. Breakfast Cookies are best stored in the fridge and will keep fresh for up to 7 days. Be sure to keep them covered.

To freeze: wrap each one in parchment paper and place them in either a sealable container or a ziplock bag. They will keep well frozen for up to 6 months.

When a snowstorm hit, Justin's dad, Terry Jackson, and I had a fun way of dealing with it. We hopped in his red Honda Civic, drove through the snow (barely) to the nearby Meijer store, and pick up stuff like beans, cheese and tortillas. Back home, we'd kick up a storm in the kitchen. While the wind howled outside, we prepared for it to blow inside. We'd make our own homemade bean burritos! Our recipe wasn't just about beating the cold weather. It was about having a good laugh, making memories, and enjoying some really (ok kinda) good food together.

Keto Green Bean Casserole

  • 3 cans Green beans  (or 3 bags frozen green beans)
  • 2 cups home made cream of mushroom soup
  • 1 cup cheddar cheese
  • 1 cup bacon bits
  • 1 cup of processed pork rind
  • 1T butter, or olive oil 


How to Make
Keto Green Bean Casserole

  1. grease a 9×13 casserole dish 
  2. add 3 cans of green beans  (if frozen beans are used, cook according to package )
  3. mix in 2 cups of homemade cream of mushroom soup (warm soup mixes easier)
  4. stir in bacon, and cheese 
  5. top with fried onions, or low carb version   pork rind crushed in a food processor (add melted butter, and pulse in as final step)
  6. Bake at 350 for 30-40 mins

1 tablespoon cayenne powder (use more for a spicier blend)( delete for less spice)

1 teaspoon garlic powder

Ingredients of
Cream Of Mushroom Soup

  • 1 large onion
  • 24 ounces fresh mushrooms
  • 2 tbsp. olive oil
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 8 oz. cream cheese
  • 1 tbsp. Better than Bouillon chicken flavor or 2 cubes chicken bouillon
  • 1 tbsp. minced garlic
  • 1 tsp. dry thyme
  • 1 tsp. black pepper

How to Make
Cream Of Mushroom Soup

  1. Take 1/2 of onion chopped and 1/2 of mushrooms chopped and puree in food processor with 2 tbsp. olive oil.
  2. Place puree in saucepan and heat until moisture is reduced by 1/2.
  3. Add remaining mushrooms and onions (chopped) to puree in the same saucepan.
  4. Add cream and chicken broth, cream cheese, chicken bouillon, minced garlic, thyme and black pepper.
  5. Simmer for approximately 30 minutes or until onions and mushrooms are tender.

KETO BANG BANG SAUCE

Mayonnaise: Make sure you read the label! Some brands of mayonnaise have sugar in them. - this can throw some people out of ketosis.

Chili garlic sauce  ( zero carbohydrates)  Watch out for the sweet version   

Sweetener: I recommend a powdered sweetener for the smoothest texture.  you can use regular sweetner, but it is best to let sauce sit for a hour or two to let dissolve .  

Sriracha: One tablespoon will yield mild heat. For a hotter sauce, feel free to add more to taste.

How to Make
KETO BANG BANG SAUCE

add all ingredients into mixing bowl 

whisk ingredients  together and allow to sit for at least 10-15 minutes so the flavors can meld together. Its best when it has been sitting for about an hour in the fridge.

Note

you can raise or lower heat level to your taste

  • 2T butter
  • 1T minced garlic 
  • 1 cup franks red hot sauce (or any keto friendly hot sauce)

How to Make

  • melt butter and garlic mixture, and heat until fragrant
  • add hot sauce and simmer until mixture reduces by half

  • you can use this sauce hot or chilled

Keto Buffalo Sauce – Recipe Variations

Make a thicker, creamy buffalo sauce by adding 1/4 cup mayonnaise to the cooled sauce, then whisk it vigorously until it’s combined. Add more until it’s just how you like it! Softened cream cheese cut into small pieces then stirred into the piping hot sauce also works really well. Creamy buffalo sauce is especially delicious with chicken tenders, grilled chicken breast or keto buffalo chicken wings.

Stir in a little regular or smoked paprika

Add a few dashes of Worcestershire sauce (watch the amounts as it’s not keto friendly)

Add cayenne pepper if you want more heat! If you want less heat, decrease the amount of hot sauce used in the recipe.

Crack Chicken

2 lbs Chicken breast
1/2 cup ranch dressing seasoning
2 blocks cream cheese
1 cup cheddar cheese
1 cup bacon bits
1/4 cup green onion  chopped


How to Make
Crack Chicken

In a large greased  crockpot  add chicken breast, ranch seasoning, and cream cheese

cook on high for 4 hours  
shred chicken, and stir in cheese and bacon bits    
cover and cook on low setting until ready to serve.
top with green onions

This is a versatile dish, can make sandwiches with buns, or chaffles

turkey or chicken bones  
any parts of the bird you are not going to use   wings, legs ect
onions  (rough chopped)
garlic (rough chopped)

1  large stock pot add bones, vegetables, and herbs     cover with water

bring water to a boil, then lower temperate to a simmer for 2 hours 

strain out all solids, and allow liquid to cool before storage in refridegator
